smooth, rich, easy to digest
This almond butter is nothing like the ones you usually find at the store. It is made from blanched almonds, so it has a creamier texture, sweeter flavor (no bitterness from the skins), and is easier to digest.I love it mixed with a bit of honey or blended with medjool dates for a rich treat or topping.It also makes a delicious almond milk. Just blend with water.Of course, I can blend my own blanched almond butter, but it is nice to have a pre-made version, too--especially since good quality blanched almonds are hard to find and quite expensive (maybe a little cheaper than the price of this jar, not sure). Blanching them on your own takes considerable time, and time is at a premium.

I was fooled...
...into thinking that the "raw" almonds that I was purchasing from Whole Foods and my local grocery co-op were indeed RAW. That was before I saw online several weeks ago that the U.S. government declared that all almonds grown in California are required to be pasteurized, however they could still be advertised as "raw." I discovered that any actual raw almond had to come from outside the United States. I then began to search online to find where I could buy some REALLY raw almonds and checked Amazon out. The three positive reviews that I read on the Sunfood almonds were enough to make me take a chance on them, and am I ever glad I did. When they arrived at my door, I anxiously opened the package to find out what a real raw UNPASTEURIZED almond tasted like, and WOW, what a difference! Where Can I buy Unpasteurized Milk


  So if raw milk is a high risk food, why would someone choose raw milk for their children. I remembered reading (30 years ago) that raw milk was somehow healthier than pasteurized milk. That is why raw milk is considered a high risk food and why in 1924 "grade A pasteurization" became recommended federal policy. I began to wonder about raw milk again -- was it the answer to our son's dairy quandary. Organic Pasture Dairy Company was advertising raw milk, suggesting relief from lactose intolerance, digestive disorders and asthma. Drinking contaminated raw milk, as happened to my son, can make you very ill and even cost you your life. I wondered if Chris would like it. For those of you unfamiliar with the source of contamination, let me paint a graphic picture: cow feces are in the milk. I found pleasing claims describing their cows, how they were fed, how their milk was regularly tested and how they had never found a pathogen in all the years they had been in business. They even posted all of their test results on their website and based upon this information I believed that the milk they produced would be safe for my son to consume. Also consider the juxtaposition and proximity of a cow's anus and teats, coupled with the fact that they lounge in their own feces and defecate while being milked.  If he consumed raw milk would it relieve his congestion.

On the other hand, if you buy unpasteurized milk, available only at certified raw dairies, that milk will be alive with enzymes and bacteria.  As long as the animals were raised in environments natural to them, with fresh air and sunshine and plenty of fodder, the animals gave good milk and humans feasted on it. If you buy a gallon of milk from the grocery store today, it is pasteurized.  If you leave that milk on the counter at room temperature for a day, the bacteria will grow and turn the milk to buttermilk.  If you leave that milk on the counter at 90 degrees, the bacteria will turn the milk to yogurt. Cattle, goats, sheep, yaks, reindeer, and other mammals were bred to give more milk, better tasting milk.

Many people are turning to vat pasteurized milk as an alternative to raw (or unpasteurized) milk which can be difficult to get in some areas. Homogenized milk simply means that the milk has been processed so that the fat globules are evenly distributed throughout the milk. But usually we are purchasing what is just known and labeled as pasteurized milk, also called as HTST or High Temperature Short Time Pasteurization, in which milk is heated at 161ºF for 15 seconds. Some people claim that non-homogenized milk is better for you as the processing that is used in homogenized milk isn't heart healthy. I had never heard of vat pasteurized milk before but the milk was also local, sustainable, organic, non-homogenized, and came from Jersey cows so there was a lot to be curious about. UHP (or Ultra-Pasturized) means that the milk has ben heated to a very high temperature (280ºF for 2 seconds) making a very shelf-stable product as the milk can keep under refrigeration for several weeks. This retains a high percentage of the milk's natural enzymes and beneficial bacteria which adds to the flavor and heath benefits of the milk. Even beyond whole or 2%, there are many choices when we go to buy our milk these days. The cost would prohibit me from buying this milk on a regular basis. The texture was richer and creamier than my usual (2%, organic, homogenized, HTST pasteurized) milk. A quick Google search reveals that many smaller, family-owned dairies across the US are using the vat pasteurizing process and that the milk is less expensive (as with most things.

Last week I spoke to a class of ISU students on a topic unrelated to raw milk, and afterwards a student came up to tell me that after the legislative subcommittee hearing on raw milk last month he went to the office of Dr. James Roth, ISU... "So those people in Iowa can go to Nebraska - where it's legal to buy and sell raw milk - they can buy raw milk in Nebraska and then go back into Iowa and consume it in Iowa, and they will not be sued by F. D. A. ," Davis explains. Davis says the federal agency's statement is a win for Donnelly, Allen, and others who want raw milk but can't legally buy it in Iowa. The agency told the judge it is focusing enforcement of the interstate ban on distributors and producers, not individuals who buy the raw milk for their personal use.  I then emailed the other ISU faculty member, Dr. Stephanie Clark, who testified against the raw milk bill and asked her if someone had asked her to testify. Roth told the student that he was asked by the ISU President's office -- on behalf of the Board of Regents -- to testify against the raw milk bill. Food and Drug Administration prohibits interstate sales of raw milk. Our bill was pulled from the Judiciary Committee Calendar, by [GOP] Representative Jason Schultz, due to a lack of sure yes votes to pass the bill out of committee. Does the Board of Regents have the authority to direct ISU faculty members to ride shotgun on their pet political agendas that are unrelated to Regents' business.
