Who Knew Bread Could Make Me Cry.....
Who knew bread could make me cry!! With a new diagnosis and a grumpy picky 15 year old son.... I was at my wits end to find something, anything he would like. I literally held my breath when I put this mix together in my bread maker (2lb wellbuilt - and it actually overflowed my bread pan!!) anyways... signs on the doors to be quiet for fear the bread might fall.... sniffing the air every 10 minutes thinking "Yup smells like bread... could it be??". It had just cooled when my son walked in the door starving.... (being in high school, football, and lunch time have been rough!!) I ask him to sit down I've got something for him.... holding my breath some more - watching his first bite and him jumping up and down, "Mom is this for real? This is AWESOME!" Let me say that again, "This is AWESOME" now when have any of us heard those words from our teenagers mouth in relation to anything. I got huge hugs, kisses and high fives, I think he even was dancing!!! My other 4 kids in the house...

A very good bread, with some tips
I have been gluten free for several years, and I generally don't even attempt to eat bread anymore, even the gluten free kinds. When we discovered that gluten seemed to really affect my autistic son, we had to come up with something for lunches for school. This mix had good reviews so I decided to try it. I have a dedicated gluten free breadmaker that was a gift. With a little toying, I was able to program my machine correctly for the bread. The first loaf I made was underdone in the middle, so I increased the baking time by five minutes for the second one. It wasn't a total loss, because I put the underdone pieces in a buttered skillet and fried them until they were done in the middle. You will need to choose the lightest crust setting you have and change it so there is only one rise time for the bread. Great Bread

best gf bread EVER!!!!
UDI's GF bread is the best GF bread I have ever tasted because its actually soft like bread. Most Gluten Free Breads are hard and require toasting or microwaving to become soft but not UDIs. If you havent tried it, you have to. They also have cinnamon rolls and lemon struesel (spelling??) muffins that are nice and soft and delicious as well. Check them out!

Best you can buy!
I'm a baker with a child who must not eat gluten (ironic, I know). But as a baker, it's been really tough to come up with something GF that has the mouth feel and flavor of either home baked or store bought bread and muffin products. Udi's products have solved that issue. The bread tastes like real bread, and doesn't break when you make a sandwich or bite into it. The muffins are so good that you wouldn't guess they are gluten free (they actually have crumbs!)--particularly if you've been trying other gluten free products out there. great gluten free dairy free option to make lots of yummy food!
We LOVE the new gluten free Bisquick! I used to for cheddar biscuits mostly until we found out that we had a milk protein intolerance. Now, we are using this to make so many more recipes because it is dairy free and from what I can tell allergen free. The only thing I would like better (General Mills-if you are listening-I know I am not the only one that wants this) is if it came in bulk packaging. Just put the GF Bisquick in a larger box like the regular Bisquick and then sell in a 3 or 6 pack. Just mark that this review was helpful if you agree and maybe GM will listen! LOVE THIS-ORDER NOW!!

Best Tasting that we've ever had: Gluten-Free Bisquick
Our family has been wheat-free for 3 years and gluten-free for 1 1/2 so we've tried just about every mix out there. so delicious!
I was diagnosed with Celiac Disease a year ago. The hardest part of going gluten free has been that the only gluten free breads that are readily available are white and doughy. I have made one myself using a variety of flours, but it still doesn't have that whole grain taste/mouth feel. When I tried this bread after making it in my bread machine, I almost cried. It was delicious, texture was heavenly, and it was simple to make! Cheap too, especially if you sign up for the automatic reorder deal. It doesn't seem gluten free and it actually has a decent amount of fiber in it. I love Bob's Red Mill and Amazon too!

Closest thing to GF Pumpernickel or Rye Bread I've found
I use this mix on a regular basis and find that I do need to add about a teaspoon of xanthan gum to it or else it doesn't hold together for a good sandwich or bun. I've also found it's better if I add 2 TBSP molasses to the liquid measure (reducing the water by that amount). This mix also responds well to substituting ground flax seed gel for egg. It only seems to enhance the whole grain texture. I simply don't have the patience for mixing half a dozen flours to make bread. This mix and the Pamela's mix allows me to have variety in the bread I make and every loaf (or batch of buns) come out consistently good. It's easy to make buns with any GF bread mix by using a muffin top pan. Another tip is it's easy to make sure your dough has the right temp to rise perfectly - use a heating pad under the dough set on low (yes, the same heating pad you use on your back). Great GF Bread!
I have used the individual bags of Pamela's Amazing GF Bread mix for some time, but I recently purchased the 3-pack of 4-pound bags. I am very happy to report that the resulting bread is just as consistently wonderful as always. Many of my non-GF friends have tasted this loaf, and they are amazed at how good it is! I use the stand-mixer-and-oven-baking method (rather than a bread machine), as I often make round loaves or rolls from the mix. The bread is delicious, the preparation is easy, and now the cost is much more economical for me. Just so you know (and you can do the math for yourself to see which is the better purchase for your family), there is (almost) enough flour in each bulk bag for 4 loaves, as prepared according to the directions on the back of the bag. Remember that with this product, yeast will be needed to add to the mix, along with eggs, oil, and water. Using milk (rice, cow, soy) for all or part of the water will result in an even more tender and moist loaf...

Best Gluten Free Bread Mix
I have used the Wheat Free Bread Mix and then found this in the larger packages. I purchased it despite the different ingredients list (which isn't correct on Amazon - go to Pamela's Website for the real one). It was very close to the Wheat Free version. I love having the bulk bags so that I can take as much as I need. I used the flour blend to make Apple Crisp this weekend and it was wonderful. It makes a great bread too. Best I've had!

Best tasting gluten-free bread
I've had this book on my shelf for a while, always putting off baking some gluten-free bread partly because most gluten-free recipes come out disastrously and partly because I take the easy way out and buy a loaf of rice bread at the local health food/WF store. The other day I was having a rice-bread shortage so I thought I'd try a recipe, "Basic Featherlight Rice Bread," from the cookbook. Good thing I gave it a try. That was the best, most delicious gluten-free bread I have ever tasted. The texture couldn't be more perfect, crunchy on the outside and soft and chewy in the middle, qualities that I miss and long for from regular bread. It tastes very delicious. It also doesn't necessarily need to be toasted, as most gluten-free breads require to make them more palatable. The bread was actually very easy to make. Great Sounding Recipes, But Check Your Pantry First!
For anyone newly diagnosed with Celiac disease, it doesn't take long to figure out the Bette Hagman is 1st in gluten free cookbooks. Her previous books not only contained recipes, but wonderful information for Celiacs. So I must say I was disappointed to find out that I could not try a large portion of the recipes in this book because they all contain a flour that I am unable to obtain. Bette's latest favourite flour is sorghum flour, and it is produced in the U.S. by JOWAR foods. Neither my local health food store, nor myself via their web page, have been able to get a response on ordering this flour to be shipped to a Canadian address. What recipes I have been able to try have been wonderful, but with the main section of this book based on having sorghum, I would not recommend this book unless you have access to this ingredient.
