Excellent knives
I bought these knives based on others experience with the global brand cutting knives. I was not disappointed. This is a great value and these really are great knives. I'm a female so these knives fit perfectly in my hand (not sure how it would be for males). They are lightweight and makes cutting quick and fun. These knives meet form and function. Great Knives!!
I have used Cutco for the last 7 years and although they are solid knives, they would get dull rather quickly on me. Even though the sharpening is free if you send them to the manufacturer's, it could cost up to $50 for the shipping. The free sharpening they would do at your house is not the same and I just didn't want to deal with the sales pitch. I researched for a month and kept coming back to the Globals. When I received the 25th Anniversary set right after Thanksgiving, I could not believe how sharp they were..scary sharp! I also bought a John Boos cutting board to help keep the knives at their optimum. These knives are amazing, lightwight and easy to handle, love them!!

Great knives. Global had everything I wanted in a knife.
I wanted my knives to have the following characteristics: 1. sharp 2. Lightweight 3. Thin blade. 4. The feel it will last forever.They are most definately sharp. Very light weight. Thinner blade compared to some German knives. I also got the feeling they would last forever due to the handle being metal too. Other knives you may have to worry about the rivets or deteriorating wood handles.Handles: I bought these online based on reviews and the pictures here on Amazon. In the pictures I thought the black dots may have been some kind of rubber for grip. I wasn't too keen of the thought of potentially having little pieces of rubber glued to the knife. I bought it for my husband for his birthday and he loves it! He cooks everyday so it was perfect present for him.The knifes are very light, well balanced and SHARP! I also loved them and now it's hard to use regular knife even right after sharpening. I used to struggle with cutting off some fat from meat, now it's piece of cake.If someone thinks about buying I recommend to purchase also Global Ceramic Whetstone for sharpening to keep knifes in perfect condition. Sharpening steel should be avoided (to abrasive for such fine knifes (note from booklet that came with the set).Also it is better to keep such knifes in a knife block. Almost perfect
This is one of the first global knives I bought. I loved it the first time I held it in my hands. What impressed me most was the perfect balance, the lightweight, and the sharpness. However, what may be perfect for me may not be perfect for you. I'd recommend anyone who is shopping for cutlery to go to a store and try how the knife feels in your hands before buying. And if you can borrow from a friend to try, that's even better.Having used this knife for several years now, my initial impressions haven't changed. This is still my favorite knife for most tasks. I maintain it regularly with a steel and it is as sharp as it ever was. I have found though that for certain tasks like cutting slits into an onion for dicing or cutting root vegetables, I do prefer a heavier knife (that's why I bought another forged global knife), but that is just personal preference. All in all, a great general purpose kitchen knife.

I have been a keen amateur chef for more than 30 years. I was given a full set of Sabatier chef's knives as a wedding present and have been using them since 1970. Go Global
This like all Global knives is extremely high quality. I cook a lot, and use my knives so often. Global knives are so sharp, and hold their edge a very long time. Their ceramic rod and a few swipes every other day is about all they need to keep them like a Razor! I do use a stone on them about once every three weeks, but it is a very fine one. The handle is comfortable in the hand, and the balance is great. It is all one piece, and easy to keep clean. You can't go wrong with Global knives.

Most useful knife I own
I have 10 Global knives covering a wide range. I bought each individually over the course of several years and put quite a bit of thought into each purchase to ensure that it met a need and that the Global knife was the best designed knife of its kind (usually the case which is why I own more Global knives than other kinds). Despite my broad range of choice I find myself pulling the 5.5" vegetable knife off the wall more than all others. I'm a sharpening fanatic and this knife is unbelievable - I can effortlessly dry shave hair off my arm (it will grow back). I believe it's my most frequent choice because the size is just right for almost any chopping job - vegtables, fruit, meats, breads (you don't need a bread knife if your regular knife is insanely sharp), sandwiches and even some cheeses. The fact that the knife is blunt nosed initially did not attract me to it but the broad side of the knife is usefull for picking up food or spreading and makes the knive a bit less...

Just about perfect!
I loved my 8 inch Global chef knife so much I ordered this veggie knife. Oh wow, this thing is perfectly balanced and because of it's smaller size it is just about perfect for most veggies. It also fits in your hand extremely well. If you are going to cut up a potato, it is hard to beat the chef's knife. However, for cutting up a tomato, carrot, etc. this thing is the best tool I have ever used. Just wonderful!

Performance is the reward
The look is atypical, but the cut is stunning. Before purchasing this knife, I read lots of reviews and looked at lots of knives, but I kept coming back to Global. I've never used a knife this sharp. This blade deserves your respect (not a review for the squeamish)
I've had this knife for a few weeks now, and it has made chopping onions, peppers, and fresh herbs (my main digs) an absolute pleasure. It glides through everything that I put under it. I hone the knife every time I take it out of the drawer, and it's still as sharp as the day I got it. I'm planning on a professional sharpening after about six months of use, considering how much I use it.***Fair warning-- this review contains a description of an injury sustained while cooking. If you stop here, though, just know that this knife is FANTASTIC.***About a week and a half ago, I was slicing an onion parallel to the cutting board (for a fine dice) and I underestimated its sharpness-- I put a little to much pressure behind it, and it slipped into my finger, including quite a bit of fingernail. I don't know why the others -- including other hollow-ground santokus -- are still in the house. They don't get any use anymore; this is not an exaggeration. The edge this holds is phenomenal.
